Pure and simple.

Meat and veggies.

Pork shoulder marinated in Cilantro pesto with Herbed tomato and cucumber salad

Cilantro Pesto.

Bunch of washed/chopped Cilantro

Bunch of washed /chopped basil

2 cloves garlic

1/3 C olive oil

2 tbsp lime juice

Salt

Blend until smooth.

Tomato cucumber and Lime salad

2 large chopped heirloom tomatoes

12 cherry tomatoes halved

6 Roma tomatoes diced

1 Persian cucumber torn and cut and slightly peeled.

1/3 cup fresh squeezed Lime juice

2 spring onions/ thinly sliced

1/4 C red wine vinegar

chives, cilantro and tarragon

1/4 olive oil.

Marinate spring onion in red vinegar for twenty minutes; then drain and combine all ingredients.

Marinate pork shoulder in Pesto for several hours in glass containers, refrigerated.

Skewer with red onion slices.

Grill for 10 minutes over full flame

Kebabs were accompanied by a greek yogurt, dill and feta with lime juice sauce for dipping.

(not in full Paleo alignment; but it is the weekend, and you know how I get)

I hope this weekend finds everyone warm and well and outside in the sunshine.

Preferably by the grill.
